Dom Perignon was the 17th century Benedictine monk who `invented` Champagne. The name Dom Perignon was originally registered by Eugene Mercier who sold the brand name to Moet & Chandon. Produced from only Pinot Noir and Chardonnay grapes, with the exclusive choice of plots offering perfect conditions, Dom Perignon chooses only the best harvests and thereafter, a long, slow ageing of the wine. Each vintage offers a new aspect of Dom Perignon, reflecting a new creation for the wine maker. In its constant quest for the ultimate balance between Pinot Noir and Chardonnay, the Dom Perignon style exudes a complex structure made up of delightful aromas and sensations, with a full-flavoured palate and intense character.
