William Fevre

William Fèvre is one of Chablis’ greatest estates, created by William Fèvre between 1957 and his retirement in 1998, when he sold the domaine to Champagne House. Joseph Henriot. Beginning with just 7 hectares and growing gradually to 48 hectares, planting in the best of the Premier and Grand Cru sites where the vineyards had fallen into disrepair. The talented Didier Séguier came in as Head Winemaker from Bouchard Pere et Fils in Beaune. The domaine wines include 12 hectares of Premier Cru vineyards and a staggering 16 hectares of Grand Cru.The whole crop of their domaine wines, straight Chablis included, is harvested by hand, the grands crus in small ‘cagettes’, with a sorting table back at the winery to ensure the quality of the raw material. In 2023, the domaine was purchased by Domaines Baron de Rothschild (Lafite), led by Saskia de Rothschild.

Burgundy

The illustrious wine region of Burgundy, home of the world's greatest Chardonnay and Pinot Noir, can be confusing for even experienced wine buffs. Spanning 26,000 hectares of vineyards and over 3,000 individual producers across nearly 100 different appellations, unlocking the mysteries of Burgundy for your drinking enjoyment can require a sense of adventure, but getting to know a few villages and their style is a good way to start the journey. Burgundy is broken into six distinct areas. Just south of Dijon, the Cote de Beaune and Cote de Nuits make up the larger Cote d'Or, considered the beating heart of Burgundian production and the focus of the fine wine world. Vineyards are divided into tiny parcels, and some growers may only own a row or less of vines in the most esteemed sites. Chablis, in the north, is famous for its crisp whites, while south of the Cote d'Or Cote Chalonnaise and Maconnais offer great value. Propping up the Burgundy map is the large region of Beaujolais, the place to uncover juicy, fruity, unoaked Gamay wines. Burgundy

Chablis

Though firmly a region of Burgundy, the northerly location of Chablis makes for a very different style of wine than those that come from the Cote d'Or and Macon, over 100 km to the south. Exclusively made from Chardonnay, the cooler climate contributes to the lean, mineral wines typical of Chablis, with fresh acidity and intense flavours. Chablis has two distinct soil profiles, and wines made from grapes grown in fossil-rich, mineral Kimmeridgian clays are the more highly regarded. The region's Grand Cru and Premier Cru vineyards are located on these soils. Portlandian soils, the other profile, are lighter in minerals and fossils and produce fruitier wines. Four quality levels exist in the vineyards of Chablis: Chablis Grand Cru, Chablis Premier Cru, Chablis and Petit Chablis. Typically pale gold in colour, with some green tinges, Chablis are lively, mineral wines with notes of green apple, lemon, flint, freshly cut hay and occasionally lime, mint and liquorice.

From the lean, crisp wines of Chablis, to the exceptional dry Blancs de Blancs of Champagne and the buttery, rich, oaky wines of the warmer regions of California, Chardonnay wines exhibit a full spectrum of flavours and styles. As a fairly neutral grape, it is the land, soil, location, climate and winemaker that have the biggest impact on this famous grape.
