Maison Ambroise dates back to the 18th century when only a few parcels had been planted around Nuits-Saint-Georges in Burgundy. Bertrand Ambroise took over the vineyard from his father-in-law in 1987, and is now run by his son and daughter. They have been working on developing the winery`s organic philosophy and were certified by Ecocert in 2013. They remove many of the leaves around the bunches of the grapes to produce riper tannin and has de-stemmed the Pinot Noir since 2002 which, along with 28 day maceration, helps produce balanced wines of classic Burgundian character with structure and poise.

Spanning 26,000 hectares of vineyards and over 3,000 individual producers across nearly 100 different appellations, unlocking the mysteries of Burgundy for your drinking enjoyment can require a sense of adventure, but getting to know a few villages and their style is a good way to start the journey. Burgundy is broken into six distinct areas. Just south of Dijon, the Cote de Beaune and Cote de Nuits make up the larger Cote d'Or, considered the beating heart of Burgundian production and the focus of the fine wine world. Vineyards are divided into tiny parcels, and some growers may only own a row or less of vines in the most esteemed sites. Chablis, in the north, is famous for its crisp whites, while south of the Cote d'Or Cote Chalonnaise and Maconnais offer great value. Propping up the Burgundy map is the large region of Beaujolais, the place to uncover juicy, fruity, unoaked Gamay wines. View more wines from this regionThe northern half of the Cote d'Or region, the Cote de Nuits is some of the world's prime winemaking real estate, and the spiritual home of Pinot Noir, which makes up 95 percent of the region's plantings. Pinot Noir from the Cote de Nuits has a deeper colour and longer life than wine from Pommard or Volnay, say, further south in the neighbouring Cote de Beaune. Stretching 16 kilometres north to south and home to 25 Grand Cru sites and 135 Premier Cru appellations, the region's municipal centre is the small town of Nuits-Saint-Georges. While the Cote de Nuits is not as prolific as its southerly neighbour, it is a region that prides itself on quality over quantity. Of the many Grand Cru sites, the prestigious appellations of Vosne-Romanee and Chambolle-Musigny produce ethereal versions of Pinot Noir, usually for a stratospheric price. Nothing comes cheap on the Cote de Nuits, but if you're looking for diamonds (or red rubies) this is the best mine to prospect in.
View more wines from this sub regionOriginally called Vosne, the Burgundy village of Vosne-Romanee has been producing high-quality wines for over 1000 years. As is the way in many villages around the Cote d'Or, it appended the name of its most famous vineyard, La Romanee, to its title in 1866, becoming Vosnee-Romanee. Most famous for the 27 hectares of Grand Cru vineyards which are responsible for producing the most expensive wines on earth, the village of Vosne-Romanee also counts 14 Premier Cru climats, and numerous Village status vineyards amongst its plots. The easterly exposed vineyards hit their straps on the mid-slopes, just above the town. All the vineyards of Vosne-Romanee produce only Pinot Noir and these powerful, tannic wines have an intense deep red colour, and flavours thick with strawberries, raspberries and blackcurrants. Time brings preserved fruits, leather and earthy characters of game and truffle. Velvety, distinguished, long-living and full-bodied, the wines of Vosne-Romanee are no overnight success.

It is also one of the major blending grapes for Champagne. While the wines from the old world and new are undeniably different, Pinot Noir is a very distinctive variety and its wines reveal soft strawberry and cherry flavours with a heady aroma and often complex savoury characteristics when the grapes are placed in the right hands.
