Vintage Champagne
Vintage Champagne is the produce of one year’s harvest and the year of harvest (vintage) will be clearly stated on the label. It is only made in exceptional years and most houses only produce 3 or 4 vintage Champagnes each decade. Each vintage will taste unique and different, unlike a non-vintage which will taste the same year on year. There is a minimum aging requirement for vintage of 3 years on the lees which allows an even richer and more complex character to develop as a result of this extended yeast autolysis with extended notes of marzipan, baked fruits and nuts. These Champagnes can further age and develop in the bottle over several years and taste quite remarkable.
