Dandelion Vineyards was created by Elena Brooks in 2007, along with a team of experts to create a range of high quality, authentic wines from ancient vineyard plots in some of the best regions in Australia. View more wines from this producerWith household names such as the Barossa Valley, McLaren Vale, Clare Valley, Adelaide Hills and Coonawarra, it should come as no surprise that the state of South Australia is responsible for half of the total national production. For all its size this is no bulk region, with many of Australia's finest wines produced in the state and most of the scientific research and development facilities located in and around Adelaide, the state capital. Bordered by the Great Australian Bight to the south, production is limited to the south-east corner of the state - it is simply too hot further north to produce wine capable grapes. There is a vast range of soils and growing conditions, thanks to topography and climate changes, and the state is capable of producing a broad spectrum of wines. Full-blooded Shiraz, bone-dry cool-climate Riesling, deep-fruited Cabernet Sauvignon, lusty Grenache, and brisk, elegant Adelaide Hills Chardonnay are just the tip of the iceberg.
View more wines from this regionLocated north-east of Adelaide, bordered by the Barossa range, the Barossa Valley has been making wine since the mid-19th Century. Here, boutique producers and multi-national corporations rub shoulders, and the valley floors are the ideal location to showcase incredible expressions of Shiraz, the red grape that defined Australia in the global wine industry. Rich, full-bodied wines, with dark fruits and notes of eucalyptus, mint, pepper and spice define Barossa Shiraz, and the finest wines mature gracefully, developing silky, complex character. The variety is also blended with Grenache and Mourvedre to make highly regarded GSM wines. The warm, dry climate means ripening is no problem, but cooler temperatures at higher elevations toward the Eden Valley allow white wines such as Semillon, Riesling and Chardonnay to be produced successfully. Phylloxera never reached this part of Australia in the 1800s, and the very old, low-yielding bush vines which produce densely concentrated wines are particularly prized.
View more wines from this sub regionMost commonly associated with the treacle-like, rich Sherry of the same name, the Pedro Ximenez grape is also used to produce crisp white wines, which thanks to their low-acid make for an intriguing wine, but not necessarily a classic one. The chocolatey, thick, sweet Sherries made from Pedro Ximenez are produced by drying the grapes under the hot sun, concentrating their sugars and allowing the skin to raisin, before extracting the sweet juice and fermenting, fortifying and ageing.
