With a maritime climate, and Antarctic currents cooling the long warm summers and slowing the ripening of the grapes, wines from here exhibit great fruit focus alongside exuberant natural acidity. Soils are shale and sandstone, with some granite pockets. A large proportion of clay holds moisture, keeping the vines hydrated while the yields are kept low to ensure good concentration of natural fruit. The region is highly regarded for its Pinot Noir and Chardonnay, and fresh, mineral Sauvignon Blanc, and also makes wines from Pinotage and Syrah, amongst others.

Well-blended red wines should make use of complementary varieties, that balance each other well. Cabernet Sauvignon often plays a major part, as does Syrah and Pinot Noir. Australia makes excellent wines from Grenache, Shiraz and Mataro, known as GSMs. Portuguese red blends typically rely on inky Touriga Nacional, and in Argentina, Malbec and Cabernet Sauvignon are good friends.
