Palomino
A neutral grape variety from Spain, most well-known as the base for creating the saline, dry, oxidative Sherries from the Jerez region. One of three grapes used in Sherry production, alongside Pedro Ximinez and Moscatel, Palomino‘s neutral, low-acid character makes it perfect for adopting the distinct character found in the region where it is grown. Palomino is used to make dry Sherry, while the other two grapes are used to produce the sweet styles.
