Bollinger

As one of the most well-known Champagne houses, Bollinger remains family owned and is famous for its powerful, strapping style, thanks to its preference for Pinot Noir based wines. Established in 1829, two-thirds of Bollinger`s grapes are estate grown and its traditional techniques are considered too expensive to maintain by other Champagne houses. With British connections including the 1884 provision of a Royal Warrant ensuring it is always the Champagne of choice at royal ceremonies, and a 60 year history as the Champagne choice of 007, Bollinger is a firm favourite both here and abroad.

What is it about Champagne? The first choice for celebrations of love, success and life's rites of passage for generations, the exclusive sparkling wines from the Champagne region of France hold a special place in the world of wine. The most northerly of France's wine regions, Champagne's history of sparkling wines dates back to 1668 when Dom Perignon, a local monk, is said to have created the method still used to produce Champagne today. The chalky soils of Champagne are home to Chardonnay, Pinot Noir and Pinot Meunier, all employed in a typical Champagne blend. The northerly location of the vineyards means that ripening can be a problem, so using a blend of grapes is critical. Most typically made in a brut, or dry style, non-vintage (NV) Champagne is a blend of wines from a number of years. Vintage champagnes, made only in the best years, are aged extensively before release, creating richer, biscuity flavours.

Pinot Noir

Fickle to grow, tricky to make and often majestic to drink, Pinot Noir is the grape of Burgundy, and grown all over the world, most notably in Oregon, New Zealand and California. It is also one of the major blending grapes for Champagne. While the wines from the old world and new are undeniably different, Pinot Noir is a very distinctive variety and its wines reveal soft strawberry and cherry flavours with a heady aroma and often complex savoury characteristics when the grapes are placed in the right hands.
