Bought by Bertrand Devillard in 1996, this Burgundian domaine gets its name from the Premier Cru vineyards in Nuits St George known as `Aux Perdrix`, which is the French word for partridge - the bird`s image also features on the label. The vineyards are a minimum of 40 years old and the holding stretches to 10 hectares of parcels in the villages of Nuits Saint George and Chambolle-Musigny. No sprays or pesticides have been used since since 2000 and the domaine only uses compost or organic fertilisers. All the grapes are sorted by hand and only the very best oak barrels are used. The concentration of his wines are impressive, allocations are small.
