We discovered Domaine Jean Dauvissat on a recent trip to Chablis and were extremely impressed by their wines. The Domaine is now in the capable hands of the third generation of the Dauvissat family with the talented grandson Fabien. Located in Milly, they own 22 hectares of vines that are spread between 53 individual parcels in the appellations of Petit Chablis, Chablis and Chablis Premier Cru. Their philosophy is to let the terroir express itself, and therefore organic practices have been used in the vineyard since 2014 in order to reduce yields and focus on high quality grapes. The resulting wines are refined and balanced with incredible minerality. Definitely a Domaine to keep an eye on.
