Wakefield was established three generations ago, by Bill Taylor Snr, and his sons Bill and John. All three Taylors were singularly passionate about wine and most particularly the famous Bordeaux clarets. Their aim is to achieve balance, elegance and finesse in every wine and they seek to make wines that are both powerful and elegant. The Wakefield philosophy rests on the principle that the finest wines are those made with the greatest dedication and care. Above all they believe it is imperative to ‘respect the fruit’.

With household names such as the Barossa Valley, McLaren Vale, Clare Valley, Adelaide Hills and Coonawarra, it should come as no surprise that the state of South Australia is responsible for half of the total national production. For all its size this is no bulk region, with many of Australia's finest wines produced in the state and most of the scientific research and development facilities located in and around Adelaide, the state capital. Bordered by the Great Australian Bight to the south, production is limited to the south-east corner of the state - it is simply too hot further north to produce wine capable grapes. There is a vast range of soils and growing conditions, thanks to topography and climate changes, and the state is capable of producing a broad spectrum of wines. Full-blooded Shiraz, bone-dry cool-climate Riesling, deep-fruited Cabernet Sauvignon, lusty Grenache, and brisk, elegant Adelaide Hills Chardonnay are just the tip of the iceberg.

Red blended wines are created around the world from a multitude of grapes and are often focused on local varieties. Well-blended red wines should make use of complementary varieties, that balance each other well. Cabernet Sauvignon often plays a major part, as does Syrah and Pinot Noir. Australia makes excellent wines from Grenache, Shiraz and Mataro, known as GSMs. Portuguese red blends typically rely on inky Touriga Nacional, and in Argentina, Malbec and Cabernet Sauvignon are good friends.
