Darling
Darling is a coastal wine producing sub region of the Western Cape, located just 10 km from the Atlantic ocean to the west and 65km north of Cape Town. The region has a cool climate which is heavily influenced by the proximity to the ocean. The climate and the ancient granite soils are perfectly suited to the production of intense styles of Sauvignon Blanc and Shiraz often from old bush vines. The significant diurnal swing between day and night temperatures allows the grapes to ripen slowly, developing complex flavours whilst retaining their acidity.
